• Yummy, healthy things // recipe •

I'm on a health kick! Now don't get me wrong, I've consumed an unhealthy amount of chocolate this week (hey, it is nearly Easter) but I've been balancing it out with light, healthy, yummy meals. I thought I'd share a few of my faves of the week; a breakfast & a lunch. Enjoy!

Fish 'n' Eggs
Ingredients:
• one egg
 ready cooked mackerel (chilled)
 sour dough bread
 butter
 salt
 crushed black pepper
 dried parsley 

Method: 
1. Boil the kettle and sprinkle some salt into an empty frying pan. Fill the pan with the water when it has boiled.
2. When the water is boiling and bubbling, crack an egg into the water.
3. Toast the sour dough bread.
4. Butter the sour dough bread when it's toasted. Then grab your mackerel and place it on top of the bread.
5. When your egg is poached (when it's not runny and doesn't look like it's about to break apart/fall to pieces) grab a slotted spoon and scoop the egg out. Place it on top of the other slice of sour dough bread.
6. Season your breakfast with salt, pepper and dried parsley.

Veg on toast (serves 2)
Ingredients:
• 300g spring greens (discarding the tough stalk)
• 4 shallots
• 1 clove garlic
• soft cheese
• 1 teaspoon cumin
• 1 tablespoon red wine vinegar
• sliced white bread

Method:
1. Wash and de-stalk the spring greens. Shred them.
2. Finely chop the shallots.
3. Heat some olive oil in a frying pan. Add the shallots and red wine vinegar. Simmer for a few minutes until the shallots are soft.
4. Add the spring greens and the cumin to the shallots and vinegar. Season and stir fry for 3/4 minutes.
5. Toast the bread. Rub the bread with the garlic clove. Drizzle with a little olive oil.
6. Heap the spring green mixture onto the bread.
7. Top with a dollop of soft cheese.
8. Sprinkle with chilli flakes (optional)
9. Drizzle more olive oil on top.
These recipes are so easy! I whipped them both up in less than 10 minutes - you can't argue with that. I think I'm already preparing myself for the overindulgence of chocolate in the coming weeks, and I'm starting to get pre-Easter guilt.

    1. Hello, yeah I do feel better. I've always been a healthy eater but I do like my sweet things, i.e. chocolate, cake and chocolate cake! We all need a treat every now and then :) Daniela x
